This qualification is specially designed for chefs who prepare and cook from fresh ingredients. The course works in partnership with the workplace, covering specific cookery skills, dish preparation and all other areas of the professional kitchen including hygiene, team working, and food safety. The optional units are chosen by the learner based on their work duties. Some examples include cooking and finishing dishes of fish, meat, poultry and vegetables, preparing and cooking sauces rice, pasta, pulses and bread and dough products as well as setting up and closing the kitchen and completing kitchen documentation. With over thirty optional units to choose from, there will be something for everyone.
