The qualification is suitable for people working within a kitchen environment where the majority of the menu items are finished/processed on site for bulk or quick (but still good) food. Topics cover practical preparation and cooking techniques as well as hygiene, team working and food safety. The optional units are chosen by the learner based on their work duties. Some examples include cooking and finishing dishes of fish, meat, poultry and vegetables, preparing and cooking sauces rice, pasta, pulses and bread and dough products as well as ordering stock. With thirty optional units to choose from, there will be something for everyone.
