Course Description
This course has been designed to give first tier workers an
appreciation of the fundamentals of good food hygiene practice.
The course gives all food handling staff the basic training and
essential knowledge as required by the Food Safety (General
Food Hygiene) Regulations 1995.
Course Content:
• The law
• Food safety hazards
• Refrigeration, chilling and cold holding of foods
• Cooking, hot holding and reheating of foods
• Food handling
• Principles of safe food storage
• Cleaning
• Food premises and equipment

Who is it For?
All food handling staff and those wishing to gain employment
in food handling.
Time
Course duration: Six hours
Certification
Delegates who successfully complete the multiple
choice exam will be awarded a CIEH level 2 certificate
‘Food Safety’.
