• Microbiology and Illness
• The Danger Zone and High Risk Foods
• Contamination and Prevention of Illness
• Preparing and Presenting Food
• Delivery and Storage
• Personal Hygiene
• Cleaning and Disinfection
• Food Pests

The course is a mixture of guided class room based learning, practical exercises and facilitated group discussions.
At the end of the course delegates complete a multiple choice test paper and receive a certificate of attendance. There is no mandatory re-qualification period but it’s recommended that a refresher is taken at least every 2 years.

The duration of the course is : 5 - 7 GLH
